Tagliatelle with cuttlefish ink is made in small lots, slowly extruded through brass dies in order to achieve a rough surface and an exceptional texture which optimizes sauce adhesion. The cuttlefish ink in this particular pasta gives a soft “seafood” flavor and can even be combined with seafood in cold salads as well as to enrich the taste in summer or winter fish soups.
