Our workshop is located in the center of the Domokos Plateau - in the region of ancient Dolopia, where many remainings of the ancient have been found.

All our creations have their roots in the culinary past of Greece but are further developed for modern needs with respect for human and nature.

  • Bouyiourntí (mild)

    The word Bouyiourntí is used for a delicacy that can be as “spicy” as official documents. Dolopia produces Bouyiourntí with Katiki cheese (Katiki Domokou) as this is a well-known product of the surrounding area. Katiki Domokou is a fresh cheese made from goat’s milk or from a mixture of goat’s and sheep’s milk. Ideal as a starter, a spread or a dip for vegetables sticks or cheese sticks.

  • Bouyiourntí spicy

    The spicy version of the mild Bouyiourntí of Dolopia is slightly altered using Feta cheese, which provides a little bit less acidity. The spices used are hotter and so it is both smoother and spicier than the "classic" one. Enjoy as an appetizer, as a bread spread or as a dip for vegetables or bread sticks. It goes perfectly well with sausages, burgers or - a classic - with a glass of good Tsipouro.

A few words about our pasta

For the production of Dolopia Traditional pasta we only use fresh goat milk without adding any water. This is the reason for their authentic strong aroma and rich taste.

Dolopia's pasta is made in small lots, slowly extruded in order to avoid any heating up so that all natural wheat flavours can be preserverd.

A very critical production point is the fact that we use brass dies in order to produce pasta with rough surface and exceptional texture which optimizes sauce adhesion.

Our pasta is air dried - in well ventilated rooms at room temperature. Using this process we guarantee that the wheat’s natural flavors and aromas are well maintained.

We do not use any additives or preservatives.

Our daily goal is to improve our products, our manufacturing techniques and - of course - the gustatory result of every of our creations. Patricipating in international competitions helps as in order to achieve this goal. With great agony we are waiting every year for the results of the competitions and even more for the judges' comments.

The Great Taste Awards are organized annually by the Fine Food Guild and host over 10,000 culinary creations in various categories and therefore have become one of the most important delicatessen competition worldwide.

Outside of the city Penrith - England, Dalemain Mansion is famous as the home of the World Marmalade Awards. Each year participate thousands of producers from all over the world - exclusively with marmalade creations.
